Tuneage Tuesday #2

I absolutely love music. I can’t go through a day easily without it. Even at work (at least with my early shifts) I’ll have one of three music apps on my phone playing before the store opens. While working on a blog or even writing in my journal, I have to listen to one of my several playlists on itunes (playlists are the best things ever) or on 8tracks. Because of my love of music, I plan on sharing one song a week here on my blog. Either something I’ve always loved or a new song I’ve recently discovered.

Happiness Is Overrated – The Airborne Toxic Event

I discovered The Airborne Toxic Event (a Los Angeles indie rock band) about three years ago when I was living outside of Pittsburgh with a friend of mine. I’d heard “Sometime Around Midnight” several times on the radio, but it was my friend and roommate T, who really got me interested in the band. Since then, I’ve seen them live and have a couple of their cd’s. They are a great band to turn up and dance out your frustrations to or just unwind with a good book to.

Foodgasms: Spinach, Arugula & Strawberry Salad

I love salads. But sometimes, they can get rather boring. Because of that, and because I am trying to eat healthier, I’ve decided to start experimenting with different salad makings and new flavors. My ultimate goal is to make a salad with over 20 ingredients that all work harmoniously. Plus, a homemade dressing that ties it all together. And that is how I came to discover arugula.

If you have never tried it, arugula is a leafy green veggie that tastes fairly peppery and mixes perfectly with spinach. Arugula is wonderful to use in a summer salad, and while it’s definitely not summer, I couldn’t wait to try it out, especially after I found some deliciously ripe strawberries at my local grocery store.

This simple, five ingredient salad comes to a perfect finish with the sweet & tangy lime dressing that I drizzled all over the top. If you’re looking for a great accompaniment to a summer barbecue or picnic, then look no further.

Spinach, Arugula & Strawberry Salad:
1 cup fresh arugula
1 cup fresh baby spinach leaves
1/4 cup sliced almonds
1 pint sliced strawberries
1 medium cucumber, sliced, with or w/o peel

In a salad bowl, combine all ingredients and lightly toss together. Serve chilled and drizzle with sweet & tangy lime dressing.

Sweet & Tangy Lime Dressing:
1 tablespoon Dijon mustard
1/2 to 1 tablespoon sugar
2 1/2 tablespoons fresh lime juice
1 1/2 teaspoons honey
1/4 cup fresh orange juice
1/4 cup olive oil
Season to taste with kosher salt and pepper

In a medium bowl, whisk together dijon mustard, sugar, lime and orange juice vigorously until completely blended and the sugar is dissolved. Drizzle in the honey and whisk vigorously until completely blended. Then slowly add the olive oil in a continuous thin stream while whisking the whole time until fully incorporated. Season to taste with kosher salt and either black or white pepper.

How Sweet It Is #2

I’m always telling my friends how it’s the little things in life that truly make me happy and give me the most enjoyment. I definitely need to start focusing on the positive things in my life, so I’ve started to chronicle the things that make me smile or bring me joy, each week.

01) Finding out that I was right about something all along – for the second month in a row.
02) Finally getting over bronchitis.
03) Finding a new antibiotic that doesn’t cause an allergic reaction. Always good!
04) Introducing someone to Harry Potter.
05) Coming up with a name for my bakery.
06) Printing off the forms for a business license.
07) Rediscovering what a social life is.
08) Making new friends – and actually doing things with them.
09) Experimenting with new recipes – and enjoying the results.
10) Being told that something I made was “a perfect combination of flavors that pleases the palate” by one of my managers – and then having him place an order with me.
11) Discovering that Red Velvet Poptarts are a thing.
12) Purely platonic sleepovers.
13) Long talks with one of my closest friends.
14) Brand new books. Psychological thrillers are fantastic.
15) Discovering every inch of my local library.
16) Smashbooking again – I’ve missed it.
17) Spinach and arugula salad – so yummy.
18) Dates with J – I’m enjoying getting to know him.
19) Boxing up things from someone I used to care about and removing them from my life.
20) Enjoying the fact that that same someone is out of my life. It has brought me much peace.
